Split Pea Soup

Ingredients

2 Teaspoons cold pressed olive oil
1 onion
2 stalks of celery chopped
2 carrots chopped
2 Potatoes diced
1/2 teaspoon curry
1/2 teaspoon black pepper
1 1/2 cups dried split peas
6 cups vegetable / chicken stock
1 large bay leaf
1 cup fresh or frozen peas
1 teaspoon of sea salt
1 teaspoon of dill dried
1 piece of Kombu or Dulse

Directions

Heat oil in a crock pot or pressure cooker. Add onions and sauté until they are soft. Add celery, carrots, potatoes, curry, and pepper and continue to sauté for 7 minutes. Add split peas, dried sea vegetables, stock and bay leaf. If pressure cooking add heat to bring up the pressure then lower heat to cook for 1 hour. If using a crock pot, let it cook for 5-8 hours (Great to start before you leave the house in the morning then return to a ready-made meal!). Add fresh or frozen peas, salt and dill 5 minutes prior to serving.
