Split Pea Soup
Great for Lunch or Dinner!
Ingredients
- 2 Teaspoons cold pressed olive oil
- 1 onion
- 2 stalks of celery chopped
- 2 carrots chopped
- 2 Potatoes diced
- 1/2 teaspoon curry
- 1/2 teaspoon black pepper
- 1 1/2 cups dried split peas
- 6 cups vegetable / chicken stock
- 1 large bay leaf
- 1 cup fresh or frozen peas
- 1 teaspoon of sea salt
- 1 teaspoon of dill dried
- 1 piece of Kombu or Dulse
Directions
Heat oil in a crock pot or pressure cooker. Add onions and sauté until they are soft. Add celery, carrots, potatoes, curry, and pepper and continue to sauté for 7-minutes. Add split peas, dried sea vegetables, stock and bay leaf. If pressure cooking add heat to bring up the pressure then lower heat to cook for 1-hour. If using a crock pot, let it cook for 5-8 hours (Great to start before you leave the house in the morning then return to a ready-made meal!). Add fresh or frozen peas, salt and dill 5-minutes prior to serving.
